It’s the weekend (or maybe it’s Wednesday night) and you are just craving pizza. What’s a health conscious gluten-free girl to do? That’s right — break the rules and eat pizza!
Here’s my super simple kitchen-sink recipe for gluten free pizza following the Food Threesome guidelines.
This adventure all started with a trip to my local Publix grocery store. This was a rare treat for me because it’s almost 4 miles from my house and I have closer grocery stores so I usually go to Lowes, Kroger, Earth Fare, Target, Aldi, Walmart Neighborhood Market or the newly renovated (and upgraded) Food Lion.
My trip Publix culminated with quite a few gluten free items in my basket, one of which was this gluten free pizza crust (found in the bread section – not frozen).
I bought some organic chicken and some mozzarella cheese on sale, but the rest of the toppings I already had in my fridge. I’m going to share my recipe with you — the KEY is to make sure you have a lot of protein on there for blood sugar stabilization. Lean ground turkey, or chicken breast works great.
Ingredients (stuff that was already in my fridge):
1 large cooked chicken breast (seasoned with chipotle rub)
1/2 cup shredded mozzarella blend part skim cheese
1/2 cup left over spaghetti sauce
1 tsp red pepper flakes
1 tbsp cilantro
2 tbsp diced pickled jalapeños
1/4 c finely chopped onion
1 tbsp goat cheese
1/4 cup diced red, orange, yellow peppers
salt/pepper/ Mrs. Dash Jalapeno Salt-free seasoning
Directions: (put the things on the pizza) 🙂
Put the crust on the baking pan and cover with sauce, chicken, all the toppings, and finish with cheese. Bake per the directions for 9-10 minutes. Enjoy for days! (I love to eat cold pizza, you?)
